Tried the Signature bowl which was S$9.20. What makes it different from other BCM stalls was the onsen egg and the huge crispy flour fritter. Yes, it was still crispy when I bit into it. There was also a huge amount of minced meat added. In the soup, there were 2 big bouncy fish balls, 2 unidentified balls, 2 slices of fishcake and 1 torpedo shaped fish cake. All tasted somewhat similar which was boring for me. And I felt the noodles were overly seasoned. Chilli sauce added was also quite spicy. Not really sure why this is Michelin Bib Gourmand? Unlikely to try again.

Bounce Teochew Fishball Noodle at Jewel's Food Republic is a must-try, especially with its Michelin recognition of the infamous lixin fishball and halal certification. The fishballs are perfectly bouncy with a fresh, delicate fish flavor, while the noodles are cooked to the right texture—neither too soft nor too firm. The broth is flavorful, and the seasonings complement the dish without overpowering it. For a michelin brand, halal dish, the prices are reasonable, making it an excellent choice for a delicious, authentic Teochew meal at Jewel Changi Airport.

Doesn’t taste like the usual fishball noodles. Noodles are springing and al dente, which is a plus but they use a lot of ketchup for seasoning and totally ruined the taste. Fishball are too salty as well. Prices are on the high side as it $8 for a bowl. My last time patronising them.

Delicious! It's HALAL fishball noodles!! I think, more delicious than lixin in ION 😁 It's located in Food Republic (B2 level) Jewel.
