Home to Singapore only twice a year, I try to have as much good FBN and BCM as I can get my hand on. But, never thought that there's a FBN stall at T3 Basement 2 that's a crowd puller. Apart from the drinks/dessert stall and the Sliced Fish Noodles stall at this basement food court, no other stall held a stable queue. Then the next surprise was that, when returning my food tray, I discovered that this FBN is Halal-certified. (I was told-off by the cleaning lady that I had placed the tray in the wrong section.) So, I was having minced chicken and not minced pork. 😂😂😂 Regardless, apart from the noodles being pass its QQ-ness, meaning overcooked, the rest of my Minced Meat FBN was quite delightful, although not the FBN I am more familiar with. Yes, there are fish balls, fish cakes and what turned out to be minced chicken, but the fish balls are more peppery, and well, I now know that the minced meat was actually chicken. 😁 Not quite sure what the crimson chilli sauce is made off, but inundated with a generous offering of deep-fried shallots, the ensemble was a messy piece of art. Yes, there's an unusually large piece of wanton to top, but alas, three quarters of that wanton was flour, and only less than a tablespoon of meat (if it's even meat) clasped in the middle. Well--for a I-can't-remember-how-much-it-cost hybrid FBN, it didn't make me cringe and I actually craved for more. 😋😋😋 I will definitely be back, and I hope I will land in or take off from T3 again and again, to be able to come to this FBN stall and sample it's hybrid FBN again.

I ordered the signature noodle with minced meat and poach egg. Quite good taste and portion for $7.8. The topping was generous, the noodle was savory. We can choose either to have the plain or spicy one. We can also choose the type of noodle we want. The spicy version was indeed spicy but still bearable. The fishball was good with bouncy texture. It is located in the basement 2 of terminal 3

I'm no expert when it comes to fishball noodles - all I can say is that the dishes I tried were enjoyable enough. Had the no.1 signature noodles ($7.80) with ketchup sauce and the no.3 fishball mince meat noodles ($6) with chilli sauce, both in dry versions. Not too sure if there's anything else different between these two dishes other than the addition of fishcake and runny egg in no.1. In any case both were pretty good and come with 1pc of the large looking wanton. Well it is labelled as "jumbo wanton" on the menu though the size is really all in the skin, and there's the tiniest bit of meat hiding somewhere in the centre. Still, good for the crunch factor.

Ordered their Signature Noodle. Price wise, I think it s value for money. My experience wasn’t that fantastic maybe because I’m not sure entirely what to expect from an authentic experience But I think the fishballs, if homemade, would have been more meaty. It’s almost perfect, but not 100% what I imagine a homemade would taste like Was not too excited with noodles. I asked for a spicy bowl of mee pok, and it tasted as though the noodles were coated with chilli sauce instead of chili sambal. Wasn’t spicy at all. The soup had slightly strong fish smell. Not enough stock taste The egg and dumpling was a nice touch to the bowl of signature noodles. Definitely added flavour and texture. Might try different options next time instead
